Swiss Cheese Fondue

Cheese fondue is very easy to make, and it’s perfect for cold, dark winter nights at home!

Serves 4 Preparation time 20 mins Cost per portion £ 1.90

Method
1. Halve the garlic and rub the inside of the fondue pot with it.
2. Pour the wine and lemon juice into the pot and bring to the boil on a medium heat.
3. Turn the heat down a little bit then add the grated cheese in handfuls to the wine, stirring well and making sure each handful of cheese has melted before adding more, until all the cheese has been added.
4. Mix the cornflour with the kirsch and stir it in with the melted cheese, and continue heating over a low heat until you have a smooth, thick texture. (If you overheat it or don’t stir well enough, the cheese can separate out; to resolve this, turn the heat down and stir vigorously until the cheese is smooth again. If this doesn’t work, add another teaspoon of cornflour mixed in with a little bit of wine).
5. Finally add a bit of grated nutmeg and/or paprika.

Ingredients
1 clove garlic (optional)
200 mls dry white wine
1 teaspoon lemon juice
300g emmental cheese, grated
300g gruyere cheese, grated
3 teaspoons cornflour
3 tablespoons kirsch
Pinch of nutmeg and paprika (optional)

To serve
1 large baguette (cut into approximately 1 inch cubes)
Keep the fondue warm over a burner and serve with pieces of baguette; use long forks to dip the bread into the cheese.
