
Raspberry fool
A classic English Summer dessert….and easy as pie….
Serves 3 Preparation time 5 mins Chilling time 1 hour Cost per portion £0.78
Method:
1. Put all the ingredients together into a blender and whizz for about a minute – until the raspberries have blended into the cream.
(Or put everything into a large bowl and use an electric whisk to blend it together).
2. Spoon into glasses or bowls and chill in a fridge for at least an hour.
Ingredients for healthier version:
150g fresh or frozen raspberries
50ml whipping cream (or double cream)
50g Greek yogurt
2 rounded tablespoons icing sugar (30g)
Optional – 1 tablespoon cointreau or raspberry liqueur

I first had this dessert as a teenager at my best friends place on an exeat weekend from school – I was fresh off the boat from India and had never tried raspberries or fresh English cream; I thought I was in heaven when I had a taste of this quintessentially English raspberry fool…..if only I had known how easy it was to make…..
