Chicken Fricassee

A French chicken casserole in a mushroom, wine and cream sauce.

Serves 6

Preparation time 20 mins

Cooking time 1 hour

Cost £7.44

Method
1.Pre heat the oven to 180C
2. Sprinkle some salt on the chicken and in the flour.
3. Melt the clarified butter in a large ovenproof pan over a low to medium heat.
4. Dust the chicken lightly with the flour.
5. Sauté (briefly fry) the chicken – skin side down in the butter until the skin is brown, then remove and keep the chicken aside.
6. Put the finely chopped shallots, crushed garlic and mushrooms into the pan and cook until the onions are soft, but not brown.
7. Add the wine, stock, bay leaf and chicken to the shallots.
8. Bring it all to the boil then cover the pan with foil and put it into the pre heated oven for about 45 minutes. (Or in a casserole dish with a lid)
9. When the chicken is cooked remove it from the oven and strain the sauce.
10.  Put the chicken under a grill for 5 to 10 minutes to get the skin crisp.
11. Meanwhile reduce the sauce in a pan over a high heat until it is the consistency of double cream – this takes about 10 minutes.
12. Add the double cream to the sauce and bring to the boil, then add the mushrooms and chicken back into the sauce.
13. Serve with coarse black pepper and parsley sprinkled on top.

Ingredients
4 chicken legs
1 tablespoon flour
2 tablespoons clarified butter for frying
2 shallots – finely chopped
3 cloves garlic – crushed
10 white peppercorns
1 bay leaf
100mls white wine
200g button mushrooms
500mls chicken stock
250mls double cream
2 teaspoons Dijon mustard
Salt to taste
Coarse black pepper
Finely chopped parsley to decorate

Additional information
I learnt this recipe at le cordon bleu school in London – it is a fairly heavy and rich sauce so if you’re prone to indigestion make sure you have ample antacids to hand…..
