Perfect Panna Cotta

Panna cotta

You really can’t go wrong with panna cotta – this is one of the easiest recipes ever!

Makes 4 Preparation time 15 mins Cooking time 10 mins Cost per portion £0.29

Method
1. Soften the gelatin by soaking it in the milk for 10 minutes.
2. In a separate saucepan heat the cream, sugar and vanilla over a medium heat until it comes to the boil, then take it off the heat.
3. Add the softened gelatin and milk to the cream and stir it in until the gelatin has dissolved completely, then pass it all through a sieve.
4. Wait for the cream to cool down.
5. Pour into 4 small ramekins and refrigerate for at least 4 hours.
6. Turn each panna cotta out of the ramekins onto individual plates, (it’s easier if you put each ramekin into a bowl of hot water for a couple of seconds before inverting them).
7. Spoon some raspberry sauce on top and serve.

Ingredients
3g leaf (or powder) gelatin
3 tablespoons milk
300mls double cream
1 teaspoon vanilla essence (or 1 vanilla pod)
50g caster sugar


Optional –
Add raspberry sauce [1] or mixed berries and a sprig of mint to decorate.

Additional Information
Instead of vanilla essence you can use a vanilla pod, but then you need to split the pod lengthways and scrape out as much of the seeds as you can, and then add both the empty pod and all the seeds to the cream.
Different brands of gelatin(leaf or powdered) vary in the firmness that they produce, so if in doubt, follow the instructions on the packet for how much gelatin to use.
