Tagliatelle with Mushrooms, Cream, Herbs and Parmesan
A quick recipe with just a few simple ingredients which combine to produce a delightful and delicious result.

Method
1. Wash the mushrooms well, and then slice each one into about 4 pieces.
2. Put the cream in a large saucepan, then add the herbs, salt, black pepper and parmesan and stir them in.
3. Heat the cream gently then add the mushrooms and continue heating it all over a low to medium heat, stirring occasionally – let it all gently simmer for about 30 minutes.
4. Cook the pasta according to the packet instructions; when the pasta is cooked, drain it and add it to the cream sauce.
5. Serve in warm bowls with a little bit of finely chopped parsley sprinkled on top.
Ingredients
400ml fresh double cream
400g mushrooms
¾ teaspoon salt
3 teaspoons dried mixed herbs (thyme, marjoram, oregano, parsley, sage, basil)
1 teaspoon coarsely ground black pepper
50g grated parmesan cheese
250g tagliatelle or any other pasta
Finely chopped fresh parsley to garnish
Additional Information
The sauce keeps well – in fact it tastes better if made a day ahead – the flavour from the mushrooms then has time to permeate into the cream, so if possible make the sauce and keep it in the fridge for a day, then just boil the pasta and add to the warmed up cream sauce when you are ready to eat.
I have been making this pasta for about 30 years – ever since I got the recipe from my older brother who used to make it while he was at university in California. (He studied at the University of San Diego – USD for short – although we used to call it ‘University of Sex and Drugs’.)!
