Method
1. Put the butter in a heavy based saucepan over a low to medium heat and add the crushed garlic.
2. When the garlic turns a pale golden brown add the mushrooms and continue cooking over a low heat for about 10 minutes – until the mushrooms are cooked through.
3. Remove the mushrooms from the pan, then turn the heat up and continue cooking the butter sauce so that it is not watery any more, then put the mushrooms back in and add the herbs, salt and pepper. (If you leave the mushrooms in the pan while reducing the butter and mushroom juices they end up overcooked).
4. Sprinkle the finely chopped parsley on top before serving.
Ingredients
250g mushrooms (washed and sliced)
50g butter
6 cloves crushed garlic
¼ teaspoon salt
¼ teaspoon coarsely ground black pepper
¼ teaspoon dried mixed herbs
Few sprigs fresh parsley – finely chopped
Optional – ¼ teaspoon crushed red chillies
Additional Information
It may seem like the amount of garlic is excessive, but these mushrooms do taste very good with 6 cloves of garlic!
