Cream Cheese Icing

Classically this icing is used on carrot cake, but it also goes well on banana bread and on red velvet cake.

To ice a 20cm cake Preparation time 5 minsCost £2.00

Ingredients
200g cream cheese
100g unsalted butter
100g icing sugar
1 teaspoon vanilla essence

Method
1.Whisk the butter and cream cheese together with an electric whisk on low speed until the mixture is soft.
2. Add the sugar and vanilla essence and continue whisking on low speed until the icing is smooth.

Additional Information
This quantity is enough to ice a 20cm diameter cake.
Most recipes for cream cheese icing use a lot more sugar than this one does– if you prefer a sweeter icing you can add up to a total of 300g of icing sugar to the cream cheese and butter in this recipe; even though I have a sweet tooth I think 100g of sugar is more than adequate.
